This past week, I had leftover watermelon (we got the ginormous GMO-sized watermelon), so I decided to make watermelon juice (A.K.A. Agua Fresca in Central America). It’s watermelon, water, a touch of sugar and lemon juice. It’s a super easy, quick recipe, which is perfect for us busy moms! I like to make a big batch for the week.
I: Cut up the watermelon into cubes and mash with a hand masher (or blend). Strain the pulp into a bowl.
And those man hands you see in the pictures are not mine, haha.
II. For every cup of watermelon juice, add a cup of water. Squeeze in a quarter of one lemon.
III. Add 1 teaspoon of sugar, stir, chill, and enjoy!
